ABV 7.4%

5 gallon kegs, forced Co2


10 lbs 8 oz Pale Malt (2 row) US (2.0 SRM)

4 lbs Maris Otter (3.0 SRM)

1 lb CaraPils

8 oz Crystal 60 (60.0 SRM)

12 oz Midnight Wheat (425 SRM)


1 oz Columbus (14% AAU) 60 min

1 oz Nelson Sauvin (12% AAU) 30 min

2 oz Nelson Sauvin 0 min


WLP001 (normally I use California Ale V - WLP051, but my HBSS was out of it this time)


1.5L starter w/stir plate - 24 hours


Mash temp 152 for 60 min


Fermentation: 67 F for 5 days, then rack to secondary at 67 F for 10 days.


Add 2.5 oz of all-natural Blackberry extract when kegging


Connect Co2, chill to 40 F, Wait 7 days and enjoy!

Notes: This is an IPA at heart (with less hop aroma). However, I don't want to drink a blackberry IPA that looks pale. So, the Crystal and Midnight Wheat is essential for the darker color. The Roasted Wheat also adds that toastiness that works so well with the blackberry flavor. Of course taste is always subjective. For me, this is damned good stuff. 


After modifying the recipe for the 3.0 version, I am going back to my 2.0 recipe for the 4.0 batch - with only minor tweaks. Hey, this is part of the fun of making your own beer! You can modify your recipes until they are just the way you want them.

Notes:  This stuff is delicious. It's got the nice hop aroma and flavor you expect from a Pale Ale, but it's also got a nice malty character to go with it. This comes from the Golden Promise Malt. I may have to try a batch someday with all Golden Promise and no pale malt at all...
